Pairing Notes
This is a young, expressive wine with lots of fruit that pairs perfectly with cheese and cold cuts. Also a good accompaniment to grilled kid goat ribs or calçot onions. It's a wine that goes very well with rabbit and chicken rice dishes, as well as other dishes made with these meats, whether baked and with sauces. It's also the ideal wine to enjoy with an entrecote in peppercorn sauce or with pasta and vegetable dishes.
Occasion
Do you like a solid, clean and elegant wine by the glass? Well, this is the perfect option and will never disappoint you. Looking for a wine for heartier meals? Here it is! Ever wondered which wine will be best for you to enjoy a calçotada? This is your most faithful ally.
In the vineyard
Grapes from different Cabernet Sauvignon vineyards over 35 years old with majority calcareous soils. Hardy vines that can withstand certain temperature fluctuations within the Mediterranean climate.
In the winery
The search for fruit and colour is a major part of the winemaking process. Controlled fermentation in stainless steel at a temperature below 26°C. Consecutive macerations (with or without aeration) within a maximum of 10 days. Malolactic fermentation in stainless steel.
Cellar
Cellers Unió
In 1942 the Union of Cooperatives of the Camp of the Province of Tarragona to Reus was constituted. The entity was created with the aim of bringing together all the farmers of the province.
Three years later, Unió acquired the first facilities on Tivoli Street in the city of Reus, popularly known as "La Exportadora". In 1945 the Priorat Designation of Origin was born. That year, Unió bottled its first bottle of DO Priorat wine. In 1963 the Union of Cooperatives of the Camp of the Province of Tarragona is separated from the State and becomes a private entity.
Do Tarragona
The Romans were the driving force behind wines in the regions of Tarragona, which were considered the most privileged in the whole Empire.
The Calle Real in Tarragona, just by the port, grouped together many wineries that exported their wines by sea across Europe.
