Occasion
Peraj Ha'abib is a very good tasting companion for meats and baked dishes. Do not be afraid, its body endures well-seasoned dishes. Sautéed vegetables, risottos with vines and soft cheeses are very good pairings.
In the vinyeard
Grapes harvested by hand from Grenache vines between 50 and 70 years old located at an altitude of 500 m. Clay soil and granite.
In the winery
This wine is vinified under the strict supervision of the Rabbi of the Jewish Bean Community of Barcelona. Kosher Certificate: Lo Mevushal (unpasteurized) and Le Pessach. Malolactic fermentation begun in stainless steel vats and finished in barrels at controlled temperatures between 24 and 28ºC. Maceration of 28 days. The varieties are vinified together. Aging of 12 months in new and certified kosher French oak barrels (228L), medium and light toasted. Subsequent aging in stainless steel vats for 3 months, before bottling.
Celler de Capçanes
Capçanes Celler is located in the south of the DO Montsant. A territory with centuries of wine history that the winery is proud to be able to show through its wines.
The winery was founded in 1933. 50 years later, he began to bottle his own wines and in 1995 he began the production of his kosher wine with the Mevushal method.
Do Montsant
In 1932, the Falset subzone was created within the limits of the DO Tarragona, which had previously occupied the current territory of the DO Montsant (finally created in 2001). It currently has a total of fifty-nine wineries spread between the Priorat and the Ribera de Ebro. The DO covers everything from family vineyards to private wineries of various sizes and major cooperatives.
