Between 16 and 18 degrees
We particularly recommend this wine with grilled meats, stews, smoked cured cuts, risotto, cannelloni and cured cheeses.
This is a wine that will definitely not disappoint. If you've taken a look at the pairing notes, you'll have already noticed that it has a fanTastingic versatility. From grilled meat to rice with vegetables and meat, and not forgetting Grandma's cannelloni. What more could we ask for? Before pairing it with food, we also recommend trying it by the glass so that you can savour the rapport between the three varieties and the finesse of its wood ageing.
In the vineyard
People in the Montsant have been working the vineyards for thousands of years. It's a very remote area, based on a crop that protects nature with huge respect for the environment. The vineyards stretch along the slopes of the mountains, nestled between olive groves and forests.
In the winery
Controlled maceration of the grape during alcoholic fermentation to prevent astringency and guarantee the extraction of aromas and colour. The fundamental goal of the entire process is to respect the fruit of the vintage as much as possible. Six months in oak barrels.
In 1942 the Union of Cooperatives of the Camp of the Province of Tarragona to Reus was constituted. The entity was created with the aim of bringing together all the farmers of the province.
Three years later, Unió acquired the first facilities on Tivoli Street in the city of Reus, popularly known as "La Exportadora". In 1945 the Priorat Designation of Origin was born. That year, Unió bottled its first bottle of DO Priorat wine. In 1963 the Union of Cooperatives of the Camp of the Province of Tarragona is separated from the State and becomes a private entity.
In 1932, the Falset subzone was created within the limits of the DO Tarragona, which had previously occupied the current territory of the DO Montsant (finally created in 2001). It currently has a total of fifty-nine wineries spread between the Priorat and the Ribera de Ebro. The DO covers everything from family vineyards to private wineries of various sizes and major cooperatives.
