Pairing notes
Any occasion is good for this wine. In a quiet meal, with family or friends. If you open it about 20 minutes before serving you can enjoy it much better.
Occasion
Red and white meats are easy pairings that work well with this wine. But let's not stop here, let's put imagination into it! Sautéed vegetables, mushrooms and creamy pasta or pizza dishes are perfect companions. And with stuffed eggplants it is perfect!
In the vinyeard
Selected grapes from Grenache vines, from 15 to 40 years old, and Cabernet Sauvignon from 5 to 10 years planted in a soil of clay and granite, on terraces, at an altitude of 150 to 450 m. Picked by hand, from early September to mid-October.
In the winery
Each variety is vinified separately. Controlled fermentation at a temperature of 26-29 º C. Between 8 and 16 days of maceration. The beginning of malolactic fermentation takes place in a tank and ends in the American and French barrels from 1 to 5 years (228l). Post-tank aging for 6 months before bottling.
Celler de Capçanes
Capçanes Celler is located in the south of the DO Montsant. A territory with centuries of wine history that the winery is proud to be able to show through its wines.
The winery was founded in 1933. 50 years later, he began to bottle his own wines and in 1995 he began the production of his kosher wine with the Mevushal method.
Do Montsant
In 1932, the Falset subzone was created within the limits of the DO Tarragona, which had previously occupied the current territory of the DO Montsant (finally created in 2001). It currently has a total of fifty-nine wineries spread between the Priorat and the Ribera de Ebro. The DO covers everything from family vineyards to private wineries of various sizes and major cooperatives.
