Tasting
Appearance
Golden colour, clean and bright. A very peculiar colour.
Nose
Aromas dominated by summer stone fruits (apricots, peaches) with very defined citrus notes.
Mouthfeel
Fatty in the mouth, with a silky and creamy palate, tropical fruit flavours and balsamic details. Lingering and fruity afterTastinge.
General
One of the jewels in the crown of Cellers Unió. An unusual wine, made with a rare variety in Priorat vineyards. Very Mediterranean: fruity, balsamic hints that take you towards the forest floor of the area, with a lingering and persistent finish that will leave some notes of nuts.
Serving temperature
Between 8 and 10 degrees
Pairing Notes
In this case, the pairings are very personal. For example, drink it with a very fatty cheese or even a Roquefort. The sensations will be out of this world. What's more, thanks to its great acidity and aromatic complexity, it opens up a whole host of pairing options, either by affinity or by contrast. Also accompany it with white fish, rice dishes and smoked cold cuts. And if you try it as an aperitif? It's all about imagination!
Occasion
This is definitely a complex, original and atypical wine, highly recommended both for curious wine lovers who are looking for a white closely linked to the area and the varieties that have been grown for many generations, and for connoisseurs who are looking for a complex and robust white. A truly unique wine full of personality. It's definitely a good wine for pairing with food, but by the glass it also releases all the nuances of its single-varietal might. It will definitely wow you.
In the vineyard
Very old vine in Poboleda (Priorat), 100% coastal. With a very low yield per vine. Mineral soil with siliceous slates combined with calcareous soil. A very special terroir. Late harvest when overripe.
In the winery
Low temperature fermentation in microporous tanks that control micro-oxygenation. Ageing on the lees for three months to give the wine smoothness and volume, enhancing its varietal aromas. No contact with wooden barrels.
Cellers Unió
In 1942 the Union of Cooperatives of the Camp of the Province of Tarragona to Reus was constituted. The entity was created with the aim of bringing together all the farmers of the province.
Three years later, Unió acquired the first facilities on Tivoli Street in the city of Reus, popularly known as "La Exportadora". In 1945 the Priorat Designation of Origin was born. That year, Unió bottled its first bottle of DO Priorat wine. In 1963 the Union of Cooperatives of the Camp of the Province of Tarragona is separated from the State and becomes a private entity.
Doq Priorat
The Cartoixa de Scala Dei monastery symbolises the historical birthplace of wines and winegrowing of the DOQ Priorat (Qualified Designation of Origin).
Back in the twelfth century, Carthusian monks brought from Provence the knowledge and techniques to develop a viticulture that soon took root and has evolved over the centuries. The Carthusian domains formed the so-called historical Priorat, which today coincides with the DOQ Priorat wine region.
