Eixaders is the name of an abandoned village in the former barony of Vallbona de les Monges. Its name evokes the hoes that we still often use today to work the fields. In this specific case, Eixaders is also the Chardonnay produced by the Cooperativa L'Olivera.

Intense straw colour with golden hues.
The nose has intense and persistent notes of syrup in perfect balance with toasted wood, a lactic point and hints of brioche.
Intensely candied fruit with elegant toasting. Broad and full-bodied, with an acidity that gives it a fresh finish.
Eixaders is also the result of El Olivo's experience in making white wines ever since 1989. To make this wine, the best Chardonnay of the vintage and the best new French oak barrels are selected.

It calls out to be paired with soft cheeses and pasta au gratin with béchamel. Perfect accompaniment to ratatouille and white meat dishes such as fricassee.
If you open a bottle for the first time, you may well be captivated by the fact of trying it by itself, glass by glass. Good choice. But if you go further, as you should, and drink with any type of soft cheese, your mouth will definitely water. But don't stop there! It's the ideal partner for a hearty plate of pasta or a thin-crust pizza. What's more, it goes really well with a traditional fricassee or ratatouille. Whatever you choose, you'll really enjoy it!
The grape is grown in the vineyards on the La Plana and Torre Comes Euques plots in Vallbona de les Monges. Chardonnay grafted on 140-Ru and 41-B.
The grapes are harvested manually and pressed whole, including seeds and stems. Fermentation at a controlled temperature between 15°C and 17°C in American (75%) and French (25%) wooden barrels, with a percentage of 25% new wood. The ageing takes place on lees.
Celler Cooperatiu L'Olivera makes wines and olive oils with a view to expressing their true origins.
But the Bodega L'Olivera is much more. It's a cooperative for social integration, which incorporates people with difficulties who play an active role in the whole process.
The continental nature of this region, far from the sea, kept it off trading routes for centuries, resulting in wines with characteristic features.
It was the first place in Catalonia where the Cabernet Sauvignon, Merlot and Chardonnay varieties were introduced, together with native varieties, and also where Californian winemaking techniques were adopted.
