History

In 1986, the appellation 'cava' was reserved for quality sparkling wines made using traditional methods in the so-called 'cava' region.

As a necessary step following Spain's incorporation into the European Economic Community and the recognition of cava as a quality sparkling wine produced in a specific region, the regulations for the Cava Protected Designation of Origin and its Regulatory Council were published. This official DO protects this quality sparkling wine and distinguishes its genuine characteristics in and outside Spain.

What's more, it guides, monitors and controls the production and quality of cava, so producers and processors that fall under this DO undertake to maintain the quality of the product at the highest possible level and respect the traditional production methods. This means that the end consumer can enjoy a quality sparkling wine with a constant level of excellence.

Profile of wines

Cava, an exceptional wine that represents the finest winemaking craftsmanship. Depending on the type of ageing, the categories of cava are: Cava de Guarda: its minimum nine-month ageing strikes a balance between its acidity and its wealth of aromas, yielding a balanced, light and tasty cava.

Cava Reserve: lively, balanced and structured, outstanding characteristics of these sparkling wines that have aged for a minimum of 18 months in the cellar. Notable for their ripe fruit on the nose and their pale yellow colour.

Cava Great Reserve: without a doubt, its 30+ months of ageing make it a unique, dignified cava, with a golden colour and small bubbles. It's elegant, unctuous and extremely well balanced. Fantastic and gastronomic at the same time. Cava de Paraje Calificado: unique and with a sublime and singular personality, made with grapes from a specific location. Aged for over 36 months in the bottle, it's creamy, ripe and silky. The ideal cava for gourmet palates and the perfect accompaniment to highly crafted dishes.

Climate

The DO Cava features some general characteristics typical of the Mediterranean: a very long summer season, with plentiful sun and high temperatures in the spring/summer, which give rise to equally high solar/thermal conditions that allow even the varieties with the longest cycles to ripen.

Rain is scarce and unevenly distributed over the seasons, with little rainfall during the period of vegetative growth. Overall, the relative humidity is very low, resulting in a significant water deficit, especially during the ripening phase.

It features a transitional Mediterranean climate between the milder one of the coast, given its proximity to the sea, and the harsher continental one, which is cold in the winter and hotter in the summer, typical of inland areas. Annual rainfall is around 500 mm, more concentrated in the autumn and spring. It's very sunny, with an average of some 2,500 hours of sunshine, which helps the grapes ripen well.

The DO Cava has the following authorised varieties. Authorised white varieties: Macabeo, Xarel·lo, Subirat Parent, Parellada, Chardonnay. Authorised red varieties: Trepat, Monastrell, Garnacha, Pinot Noir.
